I can't really compare creating a multi-channel mix from a stereo film to watching an open matte film. If the remix is well done and uses the original stems, then you're not really hearing anything that wasn't originally there and meant to be heard. With open matte, you're seeing picture information that you were (except in the case of Kubrick films, seemingly) never supposed to see. I do think that a lot of times, remixes from mono sources are unnecessary, but not horrible. My rule of thumb is, if it detracts from the film, then it's unneccessary.
