This appears to be the scene in question. I'd lean towards it being a technical reason than Wyler intentionally doing Mad Max-style action editing. Or maybe they just couldn't have Hepburn do a full swing for legal or physical reasons. But one could argue the jump cut actually helps sell the moment more than if it had been a single take.
Thanks for the link. I watched it several times. Are we sure frames are missing there? It looks to me like Eddie Albert's camera flash just at the moment when she first connects the guitar to his head.
