I also use SuperDuper for backups that I do every few months. I am not sure SD is M1 compatible, but I am assuming it is.
The 2019 MBP I bought was 2TB
I would have to wait till the end of December for a new machine if I returned this one. I am leaning towards just leaving things alone.

Just spoke to Parallels and they have confirmed that they do not support M1 Pro & Max - just M. "Currently Parallels is supported only on Mac with Intel and M1 chips."

Generally higher-capacity SSDs of the same line are faster.
But really, I don't know how earth-shattering faster they would be to warrant the $600 upgrade from the 2TB...
