I think the source material Paramount used for the Blus was fine; if they would have just not used EE, DNR, and contrast boosting I think most would be fine with these. As they are today, they look like they were filmed with a 720p digital camera. Ugh...
To each his own, but in my opinion most of the original Trek movies are rather poor in PQ and do not look like film at all. The DNR and contrast boosting is atrocious once you get to third movie and later. The edge enhancement doesn't help either.

Trust me, at 124" on my professionally calibrated JVC front projector and Stewart ST100 reference screen (which is commonly used in studio post production work) you don't want to watch them except for the first two. These older transfers would have looked MUCH better if they didn't apply...

Paramount - by and large - has been a poor supporter of Blu-ray in terms of quality and quantity. Universal gets blasted a lot, but Paramount is at least as bad.
I would not expect any new transfers of Star trek either from this studio.
I see some people complain about the blue push in II, but I just watched this recently on my pro calibrated projector and didn't see where there was an issue.
I think the DVD pushed red too much and some were just used to it.
The original cast movies badly need new transfers. The first movie looks pretty good (although not optimal), the second movie looks great scanned from 4K, but the rest of them....ugh DNR/EE city. :(

Agreed. Aside from Khan, even though these might have been older transfers, I think they would have been fine if they had not DNR'd them. This is true for a lot of Paramount catalog titles.
