Ah, I'm in Jupiter on the east coast.
Anyway, when we have multiple row theaters we generally like to use Bipole surrounds. We can cover two rows fairly easily with these. See below:

This should solve your problem. The only product I know that can do this:

I have seen it online for $319.
There are several speaker brands that even have drop ceiling mounts or adapters. There are a of more aesthetically pleasing tiles available these days.
It may not be super easy to find a Triad dealer with speakers to audition. When Control4 bought Triad they added a ton of new dealers who are unfamiliar with the brand and most don't have any speakers to audition.
Dave is right, if you have a chance to listen at someone's home then that would...
It's not necessarily true that in-wall speakers are inferior to in-room speakers. If an in-wall is designed correctly it can sound just as good as an in-room model.
For example, Triad speakers within a series (Bronze, Silver, Gold etc) are designed to sound the same -- cabinet characteristics...
Take a look at Triad.
Triad is a Portland-based company that hand builds speakers in just about every configuration you can imagine. They will even color match the speakers and grills to match the paint on your walls.
Triad has In-Wall and angled InCeiling speakers and subwoofers that work...
The first thing to look at is the room size (WHD). From that we can suggest speakers and then the electronics.

You can't have any front or surround speakers in the ceiling with Atmos. Those "listener level" channels need to be at ear height for the best Atmos performance.
How far is your seating from the back wall? Can you relocate your ceiling surrounds to ear height?
Take a look at Triad speakers. They have a number of InCeiling and inWall speakers to choose from and they will paint the grills to match your walls and ceilings. Great company and a favorite of custom installers.

You are correct. You cannot have both "speaker level" and Atmos channels in the ceiling.
Because of the lack of walls in your space you are better off foregoing Atmos and concentrating on 7.1 or 5.1. You can easily install surround channels in the ceiling.
What are your room dimensions (WDH)...
Hi Darren,
I seriously doubt there will be vibrations that can be felt through the walls with standard speakers. Subwoofers are another story.
Google is your friend. :-)
How about barn doors?
