The austrian company Schrödermedien released a Region-2 Blu-ray in Germany, the quality is amazing, I own this release.
Colors are gorgeous, contrast is perfect, dirt and scratches are almost entirely removed, the overall look is breathtaking.

Yes, I think the same. The 1990 CD set probably uses the same audio as the LaserDisc and is possibly the most accurate presentation of the original Fantasound.
I don't know if the echo is already altered there or not but in the 50s and 60s the Vinyl releases did have the echo and original stereo...
Definitely not like a distorted digitally noise reduced stereo effects changed travesty with a tin can sound in 7.1.
The LaserDiscs in 2.0 lossless may be OK, sadly I can't compare it.
