I use my HTPC as a NAS, especially if you are considering installing Plex then you will want the server to have a good amount of power in case it needs to transcode. NAS machines are great for low power setups and just sending information to different machines but HTPCs are definitely more flexible.
Thanks for all the suggestions. I have a feeling a lot of the reasons some of the US cooking shows don't appeal to me is because of US culture and its emphasis on cutthroat competition. I will give some of these other suggestions a try.

I find that unless you are gaming you don't need a powerful htpc at all. You could use an old laptop instead or grab one for around the same price as that motheboard replacement.
What kind of gaming do you want the kids to do on it? If it's old emulator stuff the Intel x4500 will handle it. Unless you were thinking of running steam on it?
