The only difference with the newer models when it comes to Blu-ray playback is that because it uses the cooler 65nm chips it runs quieter then the older models due to reduced fan usage!

Basically with 120htz it shows the 60htz frames but estimates another frame between each of those. This should producer a smoother picture but many people prefer the 60htz option if possible as it's usually the native resolution.

The reason that the PS3 uses number ranges rather than age settings is quite simply because each region has different ratings across the globe and because you can play region free Blu-rays on it.
All you need to do is set against a film that you don't want your kids to be able to watch.
