I would stay far away from a lot of the cheap Futureshop media deals. Such as the Kodak ones they had one sale etc.... If you purchase cheap media you will get cheap results. I would definitely suggest Ritek Ridata branded media, I have burned thousands of these without a single issue and...

I agree, it can make for a bit more of a pain on LIVE, but can be got around :). Also if you guy's love Live, I also recommend you try xbconnect (Link Removed) as it is like live and FREE as well. Also works with modded boxes!
IMO I would say the XBOX, they are way more flexible, can run 420p, 720p & 1080i HDTV on games. You can mod it and keep you're games on the HD (No carting around discs anymore). and once modded there is SOO much you can do with it, such as emulators to run those great old Atari games right upto...

You're absolute best bet is to get you're XBOX modded, this way it unlock's you're HD and you can FTP directly from you're PC to you're XBOX. This is what I have done and would never look back. Any questions let me know. Regards, Matt
