What type of surround mode are you using? How loud are your surrounds adjusted? Some surround modes put some pretty strange sounds in the surround speakers to give a sense of space and if there turned up higher than normal (not calibrated properly) then that may be what your hearing.

Your idea sounds like it will work, but as Jeff said it isn't really necessary. Just put your surrounds on the wall about 3' above ear level. You want a difuse soundfield with the surrounds, so angling them toward your listening position MAY not be best (it will depend on your speakers).

Sounds to me that the DEFAULT audio on the POTC DVD is DD 2.0 (not uncommon). You either need to select 5.1 in the DVD (not the player) menu or with the AUDIO button on the DVD player remote. This happens on some discs even if the player and receiver are set to 5.1 or AUTO detect.
In your situation, if I read your diagram right, I would recommend this: Use "FLAT SPEAKER WIRE" (Monster, since you like that brand) under the carpet from the receiver to the back wall. Terminate at a wall plate behind the couch. Use your 14ga wire from the wall plate to the speakers.
