Original relative levels are basically known, but the level of the music in the 5.1 mix was heightened at certain points to mask the source of the dialogue being the late-generation optical prints.
And Mr. Hitchcock kept a number of notes on his thoughts for the soundtrack.

In the end, it's not too horrible: €44.83 (without VAT) for the films and €15.50 for shipping, a total of €60.33. Given the apparent quality of the 7 films, less than €9 (a tad over $10 USD) a pop seems well within an acceptable price range, even if it wasn't an import.
