Unless the optical track was mono, that wouldn't make sense. The 70mm prints don't have mag tracks.

That sounds like either incompetence or a deliberate attempt to mimic poor projection. The 35mm prints have digital tracks, why would they show it...
Definitely not a film print. Being a Fathom event it could be a standard theatrical DCP or a satellite transmission.
Perhaps the listed running time includes the short documentary they're running prior to the feature.
If you want a streaming device, I'd recommend either an Apple TV 4K or the Roku Ultra 4K. You don't need to worry about them being "4K" devices...
