I'm just glad Lucas didn't have access to these AI tools when the SE variants of original Star Wars reached UHD BD. They are not perfect given their grain reduction (especially Empire) but at least there is no 'weirdness' and they are consistent in appearance.
I gave the the first half of the disc a spin last night. The color is gorgeous (as Technicolor often is) and the subtle use of HDR was perfect. I do agree with RAH about the slight black crush, but also some of the typical Paramount grain management. Some scenes and particularly facial skin...
Regarding streaming, it depends on the platform. I streamed The Irishman from Netflix in 4K (projected) and it looked outstanding.
However, some of the streams from Amazon Prime...Meh. Compression artifacts very obvious that are not on disc.
