They appear to be RCA connectors.

What I'm trying to hookup is a McIntosh Mac-3 (coax and optical) from my motorola DCT2000 cable box. Do you use regular RCA cables?

Yep- a RCA>RCA cable (specifically one designed for video) will do just fine. The only issue is impedance- Digital Coax is designed to need a 75 ohm cable (which is the same for video)-- while some "audio" RCAs are 50 ohm.

So, while a Audio cable would probably work-- a video rca cable is pretty much the same thing as a digital coax cable.
