I have a Sony DAV-HDX275 home theatre system. I'm trying to record the rear surround channels. I tried a speaker-to-line adaptor and got no signal. Can anyone suggest how I can record these channels? If I try using the speaker line directly I trigger the power shutdown of the unit.

If you're trying to record from tv, I think the only way you'll do 5.1 is recording to a DVR. Any other way probably down mixes to 2.0, for copyright reasons, unless there's something new I haven't heard of yet.
