We have the OnkyoTX-SR800 receiver connected to an Onkyo DV-SP800 DVD player. The speaker setup is 7.1.
We watched "Pearl Harbor" in the DVD's "DTS 5.1" option.
WoW!
Now my question. The receiver surround option is set to "PL-II Movie". I notice there are more options and have no idea of their applications. Such as "Neo Cinema" and others.
Can I get some explanation on the various settings and their characteristics or applications?

AllenLC,

I think you have your receiver setup to on Surround Mode, which kind of does make the audio from your DVD sound correct. On the remote if you're on the 'rcvr' press Direct. This will give you the feed exactly as it should be.

Now, I don't have your exact receiver, but usually these setting are to have the movies or whatever you're listen to sound as you want them to. I know on other receiver they typically have a modes for Arena, Theatre, and others. You just have to play with it and find the setting you prefer.

Yep...it looks like you listened to the movie in Pro Logic II mode even though you may have selected DTS on the DVD setup. If you press the 'Surround' button on the front of your receiver it should toggle between the different listening modes, i.e. DLP II, Dolby Digital, DTS, etc. You can do this with the remote also with the same button. This should match the selection chosen on the DVD setup.
Go to page 31 of your manual and read the part entitled "changing the listening mode', specifically the paragraph "Surround".
The 'Neo cinema' is for playing back movies recorded in only 2 channels and it simulates a 6.1 soundfield and can be used with TV programs and older VHS recordings.
If you got a manual with the receiver I highly recommend you read it. It's a pain in the butt with these new receivers these days but there are way too many features to figure it out on the fly. If you don't have a manual go to this link and download one. Good luck!

Click on 'product line', then 'receivers', then 'TX-SR800', then 'manuals' (down in the right hand corner), then 'owners manuals', then 'receiver' (again!), then TX-SR800 (again!) and finally you can download it (in PDF format so you'll need Acrobat Reader)
