IMO, these types of films are often overlooked since Blu-ray has such incredible audio and video qualities. However, it's precisely this reason why I feel Blu-ray is the perfect format for such a movie. Often the greatest audio is judged by the quality of its silence and outstanding video by nuance in texture and shadow.

All About Eve fits your description, and I think it's excellent. But your general point is quite valid. I recommend the BBC production of the novel by Charles Dickens called Bleak House....

Edit: I'm actually not sure these are on Blu-Ray; I own them both on SD.

Breaker Morant is based on a play; so it is very dialog driven. Fascinating, nonetheless.

The Diary of Anne Frank (though the Blu-ray 's video quality is only above average and not as stunning as I had hoped it would be).

"Becket" - 1964 Peter O'Toole & Richard Burton (how could you go wrong) and a good transfer

"Reds" - 1981 Warren Beatty, Diane Keaton, Maureen Stapleton and Jack Nicholson (as Eugene O'Neil) from Paramount and a good transfer

I'm surprised nobody has mentioned Doubt, with Meryl Streep, Amy Adams, Philip Seymour Hoffman and Viola Davis. As a stage play "opened up" for film. It definitely fits the character-driven, dialogue-centric BD category. It also happens to be an excellent film.
