These are my favorites, all of which I enjoy watching multiple times:

Snow White and the Seven Dwarfs (the long "Making of" doc on disk 1)
Fantasia
Rope
Vertigo
Taxi Driver
Raiders of the Lost Ark. Wish it was longer.
Pulp Fiction
The Usual Suspects
Jackie Brown
All of the Bond Documentaries that start with the word "Inside". "Inside The Man with the Golden Gun" may be more entertaining than the actual film. Also, "The Goldfinger Phenomenon" and "The Thunderball Phenomenon".

The "Going Down To South Park" documentary on the Christmas DVD (also on the Season 2 set) is pretty amazing!

"Time Machine: The Journey Back" is nostalghic and sentimental. It even has a segment where 2 main actors act in what would've been after the end of the main film after over 30 years.

Mallrats. Which is mostly talking about everything Universal made them do and tried to make them do.

I agree with Haggai about the Huston documentary on Treasure of the Sierra Madre. I actually have had a VHS copy of that one for years. The documentary on the DVD is longer and apparently restores sections that (for whatever reason) were not included on the VHS release. Very pleasant surprise.

well I have to amend my list as I watched OUATITW today and thought that the 3 Part docu is a winner.

Amazing to learn about how this film has stood the test of time.

My favorite part of the docu was seeing archive footage of Sergio Leone and Henry Fonda

Although not specific to the films;

Mildred Pierce has "Joan Crawford: The Ultimate Movie Star"
The Bad & the Beautiful has "Lana Turner: A Daughter's Memoir"

Both are 85 minutes long and are great docs!;)
