Keep in mind though that the U.K. version has the torture scene cut by a few shots, so where you gain in some scenes you will lose in others...

Correct, so if you're really after a completely uncut version, go for something like the Australian version, since it is uncut in all areas

Yeah, I would say that the torture scene is the biggest cut out of everything, and I would hesitate to call it "cut" but more "reorganized." You're missing a few key shots, but you actually gain a shot (sort of) that I really like. So it's a mixed bag all around.
Thinking about it, I believe the UK version is my preferred version if we're getting way technical. What I mean is, if we're really getting down to it and looking at exactly what is present where on paper. Everything but the torture scene is "uncut," and the way the torture scene is edited it makes it more about the two characters than it does the act itself.
But again, you're not going to notice any of this if you don't want to look for. On paper, yes. But in the context of the actual moving film, I still don't believe it matters one bit.
