This has been covered before in other threads, but you have to hold down the targeting button. I believe it is the L button, and then you can strafe the target.That's not strafing, thats locking the target. Zelda for N64 locked on targets also, I found it annoying. I'm talking about side stepping, I hate stepping around a corner only having to adjust myself to aim when I could have just side stepped the corner instead.
