Has there been any talk of Disney's Dinosaur being released on Blu-Ray 3D? I'm wondering because the opening sequence alone (especially the flying part) would warrant a 3D conversion. And wasn't the original Blu-Ray release nothing special? The movie itself is just alright, but that opening sequence was incredible... ...then the dinosaurs had to go and talk.

Which is one reason that's a pretty solid "no".
Even though it's been put back into the canon for marketing's sake, it's not suddenly considered a "classic" at the studio just because it came back out on disk.

The only reason it got a Big Blu-ray Release back at the beginning was in the days when the industry literally didn't know what movies to put on Blu-ray, and didn't even know whether traditional animation would work in high definition--So we got just about every single CGI movie converted to Blu as the first family-title tentpoles until braver souls could figure it out.
The same could be said for Chicken Little as well, but that one was already in 3D.
