Ok, the idea of this thread is to note what you would love to see on Blu-Ray, or dvd(I stated classic tv in the title but current tv fans are free to join in too). I wrote "dream big" in the title because after all this is your fantasy release. No special feature or specification is out of line. List everything you would love to see happen. Enjoy!
Oddly enough I'm going to start with a title that was released at almost the beginning of the tv on dvd craze:
My wish is for
-Planet Of The Apes(1974 CBS)Blu-Ray
*All episodes in stunning 1080P with lossless 7.1 DTS Audio. If any show would benefit from an HD upgrade it would be this. Already looks great, but it would really shine on Blu.
*Reunion special feature with the two stars, Ron Harper, and James Naughton(Virdon, and Burke) meeting again for the first time in nearly 40 years. Ron Harper has stated the realtionship wasn't so great on the set and the two never spoke to each other since. Let bygones be bygones. Bury the hatchet, and talk about the series.
*Feature commentary on all episodes by both actors(not on every single episode together, but at least a handful...lets say together on 5 eps, and split for the rest) and any writers, and directors still around.
*Every Roddy Mcdowell "Ape week" segement. In 1980 10 episodes were combined(2 each night Monday through Friday) to make an "Ape week" of tv movies. With titles like 'Treachery and Greed On The Planet Of The Apes". Roddy Mcdowell filmed segments that played during each telefilm. These must be included also...in HD of course.
* Any outtakes, deleted scenes, gags.
*Any CBS promotional materiel relating to this series for the Fall of 1974. Radio spots, tv spots, any, and everything.
*Fans go ape. A segment dealing with mega fans of the tv series
*"The Final Episode" A newly created episode with both Harper, and Naughton reprising their roles one final time as Virdon, and Burke. Find out the fate of the astronauts, and how they coped for nearly 40 years in the planet of the apes. Newly created musical score for this episode by the still active Lalo Schafrin that scored the original series.
And that about does it.....I think.

Mine would be "The Monkees" with
* alternate music tracks used for NBC reruns, CBS Saturday morning reruns in 1969 and syndication
* remastered video and stereo music tracks (where available)
* the 35mm version of the original pilot
* screen tests of some of the runners-up
* concert film of 1967 with Jimi Hendrix opening and 1969 with Sam and the Goodtimers
* appearances on TV shows between 1968-1970 (Glen Campbell, Laugh-In, Joey Bishop, Johnny Cash, Happening 68)

The Defenders (original from 1961) complete series on blu-ray. Ditto for East Side/West Side, Naked City, Mr. Novak etc. With any plausible extras. I know these are highly uncommercial propopostions, but this is my Dream Big list. If I had a massive load of Microsoft stock money to spend, I'd start a company (a la Timeless or Criterion) to put stuff like this out. Also, The Troubleshooters (BBC), and Doomwatch . (also BBC). I think much of The Troubleshooters no longer exists in material (tape) form, so that one is pure fantasy.

My two "Holy Grail" Cartoon Series
Hot Wheels and Skyhawks along with interviews with those in charge in making them, the actors and actresses who provided the voices of the characters (Including Kasey Kasem, and even something about the controversy that got both of these series yanked off the air.

I'd love to see The Jack Benny Program on DVD - all of it.

As for a series already on DVD upgraded to Blu-ray: The Mary Tyler Moore Show.

The Brady Bunch

*All 117 episodes UNCUT
*Bumpers for every episode
*ABC promos for the series
*Every episode of every Brady series and special
*Remastered in HD

Easy call if I'm taking into account everything that's already been released and is on my shelf - The Complete Ozzie & Harriet. This set needs to be remastered all the way with perfect A/V quality. It can be released on SDVD (Blu-ray isn't something I need). I'll take as many extras as one could reasonably expect. Gag reels, bloopers, a CD full of incidental and backscore, another CD full of Nelson Family songs, and any appearances on talk shows or bios. That would be wonderful and a dream come true.

Gary "if not a complete set from O&H, then the same setup for The Wonder Years (all original music secured) or In the Heat of the Night" O.

I'll name two that I'd love to see as complete sets. Both releases would contain full seasons of original, unedited content including all musical numbers and performances. I am not that concerned with extras but commentary from surviving cast members and guest stars would be icing on the cake. On Blu-ray.
Rowan & Martin's Laugh-In
The Smothers Brothers Comedy Hour

You forgot the 1997 ABC special released to promote Justus... for completeness' sake, if nothing else.
Plus, the 80s videos (Heart and Soul, among others), MTV appearances and commercials, Nick at Nite Monkee Mondays commercials and bumpers...
The OP did say "dream big".

If I had to pick one show to come out on Blu-ray, it would be The X-Files. They'd have to go back to the negative, re-render the effects at HD resolution, etc. (the same treatment that Star Trek: The Next Generation is getting). In the dream really big arena, I'd say that Fox should just empty their vaults and put everything they have on the discs.

Absolutely. Thinking about 'The X-Files' on Blu(especialy the early seasons) gives me chills.
Good point about FOX shows, which leads me to my next post......

My Holy Grail would be the entire runs of MAUDE, MAMA'S FAMILY and IT'S A LIVING on DVD, uncut episodes, bonus features welcome but not necessary. I wouldn't care if they came in a plain brown wrapper. (Unfortunately, they all have music issues so it will never happen).
Oh, and a complete BEWITCHED series set with all the proper sponsor openings restored would be nice. Lastly, all 19 BATTLE OF THE NETWORK STARS specials.

The second-season opener of MAMA features a musical sequence in which Mama, Naomi and Aunt Fran lip-sync to an entire Andrew Sisters recording during Buzz and Sonia's high-school dance. Later episodes would sometimes feature short instances of Mama singing songs such as "Proud Mary". WB would have to pay for the use of these.

If Batman is ever released, I have a feeling it might be on Blu-Ray.

There's a fair amount of Doomwatch that also no longer exists (14 episodes are completely missing), as well as episodes made on colour videotape that now only exist on B/W film (12 episodes).

Dark Shadows
All of those shows were made on videotape, so I fail to see why you think they'd be good candidates for Blu-Ray. They could never be presented in high-def, so any gains in picture quality (maybe in compression codecs) would be minimal, to say the least. The only other benefit (particularly in the case of DS) would be for space-saving. Don't think the studios would release complete sets of standard-def stuff on Blu-Ray, as it could cause confusion with certain segments of the public, and might solidify some people's wrongful claims that Blu-Ray isn't any (or isn't much) better than DVD.
No, I'm sure if those first two ever got released, it would be as DVD sets, and I sincerely doubt Dark Shadows would make it to Blu for the negligible benefits.
Now, if someone went back and fixed the 1990 prime-time Dark Shadows for a Blu-ray release (going back to the original elements, getting the picture grading right, not doing that silly 16:9 cropping, etc), that would be worthwhile.
I guess my "dream" series for Blu-Ray would be Batman and I firmly believe it's within the realm of possibility if (and only if) the rights issues can be sorted out, as it's such a high-interest title. I'd only be interested, though, if the episodes were 100% unedited, and I also feel they should be as close to their original presentation as possible (the "in color" front bumpers, "next week's villain" tag and vintage 20th Century Fox endboards intact within the episodes themselves (i.e. not presented as extras). The "ABC Color Presentation" front/end caps would also be neat (though I could live with the frontcap only being on the very first episode per disc and the endcap only on the very last one for each disc). The West/Ward/Waggoner screentests would be great as extras, as would original network promos, that PSA with Burt, Yvonne and Dick Gautier and anything else that I'm sure someone else could think of.

Perhaps because I didn't know how they were produced. The assumption was that they were filmed.
Maybe I can wish for an alternate universe where these shows were filmed as well, since that is probably just about as likely as comprehensive releases. :)
