Home theatre and multi-zone audio system

We want to set up a multi-zone audio system in our new house, and we have very limited experience. We are checking out now some multi-zone receivers, kinda liked AVR354 from Harman/Kardon (we still haven't seen much though, but we can get this one discounted for a very good deal), and I have many questions that I would appreciate your help with:
1. We will be setting up a home theatre in the living room, however I do not like wall mounted or standing speakers (as I don't have enough space and they wouldn't fit in style with the furniture), and I wanted to check if it's possible to have built-in wall or ceiling speakers instead? We were told that these would not give a good quality surround sound but i'm a bit sketical of this and would appreciate your comments - what specs should i look for in wall or ceiling speakers if this option works?
2. With multi-zone receivers, what are the options for control from within remote rooms (I know we can have IR remotes, but can we have more than one remote IR ports with the receiver? what about the control modules?
Some told us about radiofrequency remotes, are these better options than IR or modules?
3. When we want to run the audio cables, how far should they be from electrical cables? and if we have no option but to run them close to them or in the same hole, is there a way to insulate them in order to prevent interference?

Wow, I have almost exactly the same question! I would love to go with ceiling speakers, but am afraid of the sound quality not being what I am looking for. I am also afraid that to get the quality I am looking for in a ceiling speaker, I will have to pay am amount that is outside of my budget. Can we get some serious help here, please!
