Are all of the Family Dog cartoons on the 1st season of Amazing Stories or was that drawn out?

The "pilot" episode was featured in Season 2. The show became a short-lived series (10 episodes) in the summer of 1993.

It would be nice if Universal would release these 10 episodes, with the pilot, as a complete set. (They did release the 10 episodes on LaserDisc in a boxed-set, while the pilot was paired with another AS episode on a separate disc.)

It's not really a "pilot" per se -- and it's actually much better than the resulting show that eventually aired, in terms of animation and story as well. (Brad Bird for one had nothing to do with the series that followed, while he directed the AMAZING STORIES episode and you can tell the difference).

so, in the season 2 set, if and when that comes out, will that have the complete family dog on it?

No, not the complete Family Dog, just the episode of AS that introduced it.
