For starters, I do recommend Batman: Black and White (two volumes total). A bunch of short stories with no continuity to live up to. There are some great stoires in there, along with some great art.
Batman: Year One is fantastic, the gold standard, really.
The Dark Knight Returns is probably amongst the greatest stories ever told in the medium, but it's not your standard Batman story. But it's EPIC and then some.
Most fans love Batman: The Long Halloween and it's sequel, Dark Victory. I like them myself.
Batman: The Killing Joke is stunningly drawn, and a pretty good tale regardless.
I am a huge fan of the World's Finest mini-series from the early 90's (written by Gibbons, drawn by Rude). It's the very essence of Superman and Batman. Also beautiful to look at.
Amazon should have some folks top ten lists for you to peruse. Read the descriptions, and pick what you like.

I am longtime Batman fan, but never read the comics as a kid. My start was the tv series...I was in for a shock in '89 at the difference.
Anyway, BB got me hooked on the character again and I immediately left the theater and headed to the Borders next door and picked up YEAR ONE.
Since then, I have picked up YEAR ONE, HUSH, THE LONG HALLOWEEN, DARK VICTORY, ARKHAM ASYLUM (serious House/earth) and THE DARK KNIGHT RETURNS.
I finally got around to ordering THE KILLING JOKE last week and received it today, used, for $24.
The copy I got was a thin edition that has the Joker on the cover holding a camera to his face. Did I get the entire story or just a volume of it? I have not read it yet, but it seems to be just to small to be the entire story.
