Here's the answer and it is far from canon:

In the movie Boomerang (1992), Eddie Murphy's character claims to know "everything about Star Trek" and in one scene, he is watching the show with his girlfriend. He says "do you know what Spock's last name is? .... Jenkins. Spock Jenkins, of the Jenkins boys of Vulcan."

One of my favorite Star Trek moments in a non-Trek movie.

Mine would have to be the (paraphrased) 'he's vaporized' dialogue and scene in Daddy Day Care. The first time I heard that, it was priceless.

Thought I'd drop in with a new question. It's been silent for a while!

In honor of the Remastered Assignment: Earth airing this weekend, Which Apollo mission is used as the stock footage of the Apollo Saturn V rocket that is supposed to be launching a nuclear warhead?

I actually do not know the answer. But an Apollo buff probably could know. Based on the time period this episode was filmed, it could be either Apollo 4, 6 or Apollo 8. (edit: I found the answer to the question, if the source is correct. I'll reveal the answer if no one guesses.)

As a bit of trivia, the last Saturn V rocket launched to the Moon was 1972 and the last Saturn V ever launched was for Skylab in 1973.

And we all know the last Star Trek TOS episode to air was June 6th, 1969. Apollo 11 was launched in July 16, 1969, and man walked on the Moon July 21st, 1969. I still remember seeing it live! The Moon landing that is. How many of us as kids watched Apollo launches in the 1960's?

I thought it was Apollo 3 that was used as stock footage. I'm going totally by memory here. I'm sure I could look it up on Wikipedia to find the answer.

One of my earliest memories is one of the moon landings.

I wish that they would have gone through with that Gary Seven series.

Without looking it up, Apollo 8 is the likely one. It was the first manned mission, so they setup all the cameras more than they did in previous missions.
There was no Apollo 3. What might be dubbed Apollo 2 and 3 were tests of the Saturn 1b rockets. Apollo 4 was the first successful launch of the full Saturn V with first stage booster.
Apollo 1 was of course, the tragic death of the three astronauts.

Sorry guys, the answer: Apollo 4 footage was used in Assignment: Earth.

According to Wikipedia, it was Apollo 4, the first flight of the Apollo rocket. It was launched November 9th, 1967. I checked other sources and they also say the shots used in Star Trek were of Apollo 4. A piece of trivia I wouldn't expect to find about the Apollo program. That makes sense in the timeline, as Assignment: Earth was filmed either January or February 1968, according the Memory Alpha. It aired March 29th, 1968.

Apollo 6 was launched April 4th, 1968.

I can see Roddenberry, who produced this episode himself, since it was his pilot, would want to use the latest ship in the US Space Program for Star Trek!

Yes, and somewhat eerily, it aired six days before MLK was assassinated. I suppose that it wouldn't be that odd, except that the episode mentions that there will be an important assassination today:

Current Earth crises would fill a tape bank, Captain.
There will be an important assassination today,
an equally dangerous government coup in Asia,
and this could be highly critical --
The launching of an orbital nuclear warhead platform
by the United States
countering a similar launch by other powers.
