So I just connected my PS3 to my Denon AVR 2807 so I could try uncompressed 5.1 on my Blu Ray movies. I think I set up everything on the PS3, but I had a question about the display.

Whether or not I use DD 5.1 or uncompressed 5.1 (or for that matter, use anything with the PS3), my receiver now reads Multi Ch In. Typically if I have something in DTS, it used to say DTS. If it was DD 5.1, it said that too.

Can I assume everything is working fine, and when I'm connected with HDMI, it's just going to say Multi Ch In all the time?

If you have HDMI audio output set to auto, your PS3 is decoding the audio and converting it to multichannel PCM, rather than passing the native bitstream via HDMI. It's normal. If you set HDMI audio output to bitstream it will pass regular DTS and DD bitstreams natively.
