Hello,
Do the latest 5.1 receivers allow you to just have the front L/R and a Center along with a Sub and not use the rear surround speakers?

Dolby requires this feature on all Dolby Digital decoders, so, Yes.

The system would be in a small bedroom and there really isn't room for rear surround speakers. There's no way for them to be behind me, at best they would be parallel to my viewing/listening position.

The surround speakers are not "rear" speakers. They are intended to be placed to your sides, preferably high up (within about a foot or so of a typical ceiling). You will get a
much better surround effect out of a 5.1 (or 7.1, or plain old Dolby pro-logic) surround system with the speakers located properly, which is at the sides. You should also avoid pointing them directly at the listeners, in order to reduce their localisation. Try pointing them at each other, i.e. directly across the room. Another option is to use dipole speakers.
