Yes, the ideal amplifier simply multiplies the incoming signal (voltage) by a largish factor. This large voltage is fed into the speakers. The larger the voltage, the louder the speakers go.

That depends on a number of things including:
1. Size of room
2. Efficiency of speakers
3. Actual power rating of the receiver (As opposed to manufacturers rating).
Generally, though I would expect 100 watts would be enough in most average sized rooms with reasonably efficient speakers, to obtain reasonably loud levels.
If you find that 100watts is not sufficient, you can add a power amp to the pre-outs on the receiver and run your speakers off that. I would suggest that a standalone power amp will give a cleaner (not necessarily louder) sound than most receivers of similar ratings as in general they are rated accurately. There are some notable exceptions to this such as H/K and NAD.
