Well Steve I hope this one doesn't bog down on you like my British tournament. I was planning on doing an Asian film tournament after the BFI is over. That is unless the BFI tournament is a flop.
My taste in Italian Cinema tends to lean toward mainstream & Genre films so
The Good, the Bad & the Ugly
Black Sunday (1960) a.k.a. Mask of Satan
Once Upon a Time in the West
Dawn of the Dead
Umberto D
Big Deal on Madonna Street
If DATD isn't applicable then replace it with Duck You Sucker
The Collection (Blu-Ray High Definition/DVD)
Pre-orders - BLU-RAY: Akira, Casino, The Dark Knight, The Day the Earth Stood Still, Death Proof, Dr No, For Your Eyes Only, From Russia With Love, Hellboy 2: The Golden Army, Indiana Jones and the Kingdom of the Crystal Skull, Incredible Hulk, JFK, La Femme Nikita, Live and Let Die, The Matrix (Ultimate Collection), Planet of the Apes (Evolution Collection), Planet Terror, Poltergeist, Sweeney Todd: The Demon Barber of Fleet Street, The Third Man, Thunderball, WALL E DVD: Budd Boetticher Collection, Icons of Horror: The Hammer Collection, Popeye the Sailor Vol #3, Warner Gangster Collection Vol #4

I think the only Italian movie I've seen that hasn't been nominated already is Allegro Non Troppo. Not that great, but worth a nom.
Isn't Dawn of the Dead primarily an American production?
