OK, when The Bride is at the Japanese dance club, she calls out O-Ren Ishii and her crew while holding Sofie as a hostage. There is a very cool piece of music used during this piece that is not not on the soundtrack. Not the cue used for when the Bride sees her enemies. This is the piece that runs much longer and stops once the sword fighting begins.

Anyone know what this is? A huge list of music is at IMDB for this film, But I do not have a clue which one is the correct piece of music.

"Death Rides A Horse" by Ennio Morricone. Its from the movie of the same name I believe. An Italitan western with Lee Van Cleef I think? I guess the Italian name of the film is "Da uomo a uomo" which translates to "From man to man" I believe.

I love that piece of music, too. I have it on this CD, a collection of Morricone themes. It's track #27, translated there as "From Man to Man" as Marvin said.

That's a pretty cool result to get from posting a question here.
