Topping the list are Peter Jackson's earlier works...
Bad Taste
Dead Alive (AKA Braindead)
Meet the Feebles

Other must-see gory-humor films:
Re-Animator
Evil Dead 2 (the first is a must-see too, but it's more serious and less funny)
Army of Darkness
Return of the Living Dead

On the cheesy side:
Jack Frost (not the touchy-feely one - the one with the mutant killer snowman!)
Jack Frost 2: Revenge of the Mutant Killer Snowman

There's always the temptation in threads like these to list every single movie that fits, however, I think it's best to just list a few favorites.

Junk (Japanese Zombie, nice'n'gory)
Return of the Living Dead 3 (Mmmm, Mindy!)
Stacy (Gory Schoolgirl Zombies!)

Some old favorites are: Burnt Offerings and The Entity.
These are not picked because of gore but rather because they are good horror flicks.

Yeah, but I think Ken was wanting the gore

The Evil Dead trilogy are still my personal favorites. I love any good scary movie though.
