Is there any difference between using 2 composite video cables instead of 1 audio cable with two RCAs on each end? We'll say this is for sending audio from a TV to a receiver.

You can use most RCA cables for audio. They dont care about the impedence. In fact, many audio cables are made with the same 75 ohm impedence coax used for video cables.

But dont do the opposite: use a audio cable for video. (ok, you can try it, it wont damage anything). But coax comes in 50/75/110/300 ohm flavors. Video connections are designed for 75 ohm coax.

I ended up buying some NXG Sapphire series cables. They were listed as "works as digital coaxial, composite video, and subwoofer cable". I'm assuming that means they're 75 ohm.
