I couldn't find the Junior on the Da-Lite site, but I assume it's a single motor system, like the Senior...

Page 5 of 8 shows that red controls the Up and Black controls the Down... White is, of course, common. Normally, an SPST (center off) AC switch controls this. In addition to the Low Voltage X-10 option, standard (110VAC) X-10 modules could be used to control the red and black power lines. It seems like it would be fairly easy to rig it up, but for someone who isn't using X-10, it might not be the simplest route.
I think most people would opt for Da-Lite's Low Voltage Contollers (LVC)--

If your projector has a 12V trigger (as Neil mentioned), then the cheapest route (while still using Da-Lite products, that is) would be the Video Projector Interface; however, it will only allow full-up or full-down control:
