People tell me that cables are a crucial part of the system

Are these people, per chance, the salesman that make a hefty commission and high margins by selling you expensive cabling?
Cables are probably the least important thing by far in most A/V systems. You have a nice system, but having a 1,000 cable budget for something like B&W 600 series is simply ridiculously exorbitant and arguably a waste of money no matter how high-end the system. You would be INFINITELY better off spending that money on room treatements, or just on buying CDs, or really anything.
As far as speaker cable goes, I'll stay out of that debate, but I think most of the science will show that as long as you have wire of appropriate gauge for the distance, it doesn't make any difference.
Interconnects, btw, are usually what people call the line-level cables(RCA usually) between devices, as opposed to the speaker wire.
If you want professional grade cabling, you can get such cabling at very reasonable prices at places like
http://www.bluejeanscable.com/ or
http://www.ramelectronics.net/
I think you'll also find that a lot of people don't look highly on Monster cable, which is often characterized as being overpriced and comes with no technical data. As it stands now, it sounds like you've already overspent on cabling that should be sufficient for the task. I wouldn't buy anything more.
Far more worth your money and effort on doing things like proper calibration, proper room treatment (which is WAY WAY WAY more important than cabling, arguably more important than the speakers), etc etc.
