Newbie: Best connections for PS3, DishDVR, Xbox360 + YSP-800 (lip sync + video issues

Hello everyone. I have to warn you that I am new to the home theater world. I am, however, a technical person so I hope I can get this down.

I recently purchased a 72" DLP from Samsung (HL-T7288W). I have the following devices attached directly to the television via HDMI cables:
- Dishnetwork VIP622 DVR
- Xbox 360
- Playstation 3

The TV has a single optical audio cable outputting to a Yamaha Sound Projector (YSP-800).

I am having a few concerns with my setup:

1.) I see occasional lip sync issues. Sometimes I think I am just crazy and imagining it, other times it is more clear. The YSP-800 allows me to introduce lag into the audio, but that would make it even worse. If my eyes and ears are not deceiving me, it would appear that the lips begin to move before I hear the audio. I have tried adjusting the "Game Mode" settings to ensure it isn't speeding up the video, but I am not positive that has helped. Is the obvious cause that I am connecting my devices to my TV via HDMI and then outputting the audio from there? Do I need audio out directly from each device into the sound bar? Should I buy a more expensive (faster?) audio cable? The HDMI cables are all quality brands and models.

2.) Blu-ray movies on the PS3 are a big let down. The most obviously distorted images are up close skin tones and things like a shadowy street. Those both look almost stormy. Not the look of a film's grain, but just stormy. Is there a good blu-ray calibration DVD I should run through or something?

Thank you!
