Ok, I've never done this before. I need to wire up a TV, DVD player, and a receiver.

First off, my roommate has the cable running in to the DVD player and then out to the TV. Can I just plug it straight into the TV?

Toshiba 27" 27afx54
onkyo 570 system
panasonic dvd/vcr combo

Im just gonna take a guess here:

Connect TV to DVD with component cables
Connect TV to receiver with audio cables (not sure which)
Connect DVD to receiver with audio cables (not sure which)

Im not really sure which audio cables to use, that's kinda where I get lost. Am I missing any connections/cables here, or will this work?

Your receiver should be the "Switching station" for everything. Essentially all of your inputs go there (from the outs on your DVD,etc.) and there should be some sort of "monitor out" from your receiver to the TV. Hopefully that will help you out...

Not if you want to record off the cable on the VCR part of the DVD/VCR combo.

Yes, if you do not want to use the receiver for switching.

Use a set of analog (red/white) audio cables from the audio out on the TV to the TV audio in on the receiver. Make sure you turn the speakers on the TV to "off" and the audio out to "fixed".

Connect the digital out (either optical or coax) on the DVD to the digital in on the receiver. Make sure you assign the digital in to "DVD" if it is required on the receiver (look in the manual). For an optical connection you have to purchase a Toslink cable. For a coax connection, just use a 75 ohm video cable (yellow).

BTW, manuals are your friend.
