I am not sure how much you sold the car for, but a cashiers check or cash are the best ways to go. Obviously do not take any personal checks.

That is really his concern, but if he lives close by, and has a place to park it you can offer to drive it to him and then take off the plates
OR
if you have a garage, you can hold the car for him after he pays for it and gets all the paper work in order.
Of course ... all this if you trust the person.
And don't forget to sign the title over to him and there is also another form from DMV here in NY that has to be filled out with the price of the car ... call DMV to find out .. this is some new one that they started requring 3-4 years ago.
