I don't own the Onkyo 805 (yet?), but I think the key is that the receiver will simply (by default) pass what you send in as HDMI out as HDMI w/out conversion, no? I guess you can set it up to do some sort of conversion, but that's probably not desirable in most cases.
There should only be a real issue when you try to convert analog video into HDMI output through the receiver because things can vary a lot w/ the video source.
If you understand that, that probably answers a lot of the questions and would help you find whatever needed solution more quickly.
BTW, if you want good upconversion for your DVDs (and want to use HDMI), just upgrade your player, if you don't have an upconverting player. They aren't *that* expensive anymore. And you'd probably get better results w/ the upconversion done on the player side than routing all that 480i video through the receiver and then to the TV. In fact, I'd recommend upgrading to a PS3 and add excellent Blu-ray capability (and various other useful/fun media features), if you don't mind the lack of certain traditional features (eg. no native IR remote, missing front panel display, slot loading vs tray loading).
