Oops. Thanks for catching my error. I read my own handwritten notes wrong. French and Spanish tracks are indeed 2.0 Dolby Pro-logic. They suffer for that fact as split stereo surrounds are used a lot on the 5.1 mix. I will correct the review above. As for the rest of your questions:

Deleted scenes are subtitled in English and French only. (There is a funny mistake on one of the lines from the first deleted scene where Robin Williams says "It's wash and wear" and the subtitles say "A small shouldn't wear". The French subtitle is closer to this than to the correct line. I guess they did not have a script to reference for the cut scenes.)

The 5.1 track is at the 384 kbps bitrate.

The 2.0 French and Spanish tracks are at a 192 kbps bitrate.
