I think the best thing to do if they want to play in the original series era is to set it in the second half of their first 5 year mission (as has been suggested above).

That way, they can basically do anything as long as it doesn't make what we know will come years later impossible. The years of the second half of their five year mission and the time after that up to the events of "The Motion Picture" are wide open.
