The deleted scenes they do include on the disc are not workprint scenes, but are rather simply the additional scenes found in the Italian release version of the film (which is why they are Italian-dubbed only as opposed to being in the original English as they are in the workprint).

This is what really kills me. There's no reason they couldn't have used the English audio from the workprint over those scenes.
