It's tedious, but if you switch xbox and TV modes from the different aspect ratios, it does not appear to me that I am gaining any FOV in the 16:9 setting. I can see a difference in the player models themselves, though.
You may try going to a specific location in a map (with bots off) and take notes of what you see and how things look. Then change your settings (xbox and TV) to normal aspect and see how things appear to you. You can try looking at bridges or other environmental objects and try and judge whether they look stretched or not. A red or blue team sign may be another thing to look for.
Becauase of the way I think the programmers developed the game and with the exception to the player models themselves, you actually don't have to alter the setting on the xbox to see the environment stretch. Just switch your TV setting. You may notice the player bots looking skinny or stretched.
My screen does not look as sharp in 16:9 mode either. It's not that it's blurry it's just not as sharp. With DVD's, I don't see this kind of change in PQ when changing ratios like I do with UC.
