How can I split multichannel digital audio for multiple room distribution?

I would like to split a/v to three different receivers in three different rooms. I will be using a powered HDMI splitter off of my main receiver to supply video. I am having difficulty figuring out how I can get digital audio to all of the rooms. Each room has a coax (quad shield rg6) drop that I would like to use. Originally, I was thinking about upgrading my main receiver to a Marantz SR7002 since it has a coax digital output. However, after speaking with Marantz, the digital output is only stereo. Are there any receivers out there that will forward and split multichannel digital audio over its digital output (preferably coax and not toslink)? If not, does anyone have any suggestions for standalone digital audio switches & splitters (or matrix devices)?  If I go the splitter route, I the switch would need it to be controllable via a remote (IR is fine).  I might slightly extend the max range of digital audio over coax, so I'm thinking an active splitter would be preferred.

Is there a reason you can't use the audio that's already included on the HDMI connection?
