Stereo HI FI system or A/V receiver

Just got an 1080p Epson 6100 projector and 106" Grandview screen, plus I already own a High End HI FI system in two-channel stereo only (Naim-Dynaudio-B & W-)
I don’t have yet a 5.1 or 7.1 A/V receiver, so I watch movies in stereo only with my HI FI system.
Now for a basic question:
When I play a DVD/Blu-Ray movie and select the available audio in PCM 2.0 soundtrack, the sound is great, but when I play a movie that only gives me the option to be in 5.1 soundtrack, the sound is not as good and feels empty. Does this mean that I am only getting two tracks of audio and missing the sound of the other soundtrack, in other words, Must I absolutely have a 5.1(7.1) A/V receiver to have the complete soundtrack for this type of movies.

The first thing to do is make sure the analog audio on the player is set up right.  In the audio settings there should be an option for "downmix" and the best choice is probably Stereo or L+R.  Check that first.
