$5-7K budget for home theater - Part II

This is my second home theater. This time it's going to be in the basement and yes, I will finally get a projector for the big screen experience.

The ingredients:
Projector up to $3 000
Speakers up to $2000
Amp up to $1500 or second hand unit with more features (7.1 is looking good)
Screen size will be around 100", not sure what type, style to get.

So far I have been recommended the following which may be in or over budget:

Epson 6100 - better or worse
Integra DTR-6.9 AMP - friend referral
Stealth Acoustic AX3 invisible speakers, not sure if I need these, I have a feeling that I am paying a premium for the fact they are invisible in wall speakers?

Any recommendations appreciated, How would you spend the budget?

Projector - Panny 3000 ($2500)
A/V Receiver - Pio Elite 07 ($1200)

There's a million speaker options, but in general, unless you really need to use inwall speakers, I'd probably avoid them. You can get a nice Axiom set-up for under $2000
