With the PS3, you'll want to set it up to pass PCM via HDMI -- not bitstream. And then, make sure you're playing back either Dolby TrueHD or DTS-HD/MA whenever the title offers it -- this is especially true w/ Warner titles since *all* the ones available from Warner so far default to lossy DD. Most other titles will likely default to the lossless track for you, but it's good to doublecheck anyway -- you can usually tell just by bringing up the info display, which shows the proper (smallish) audio format logo and the bitrate meter (and seeing a *variable* audio bitrate that's usually well above 1Mbps).

Oh yeah. Forgot about "uncompressed PCM". For that, the bitrate would *not* be variable, but would just be a high constant value -- maybe ~6Mbps for 5.1 channels.
