In-wall wiring

I have my setup such that the plasma is mounted on the wall and all of my components are on a media cabinet, with all the wires ran inside the wall. Does anyone know if there are and completely customizable modular wall plates that I can use to plug the cables into?

Basically, something like this:

4-Port Wall Plate - RadioShack.com
Snap-In Jack for Yellow RCA Plug - RadioShack.com

... but with more options, like HDMI and speakers (my speakers are in the ceiling). I've found some wall plates that have a lot of inputs, but none that are large and customizable...

Wall plates are going to be sized for standard electrical boxes, 1 gang, 2 gang, etc. I've seen modular plates with snap-ins for binding posts (speaker wire), RCA jacks, phone, and networking jacks. For HDMI, you're probably looking at a dedicated 1 gang sized face plate if you want to only see a jack on the wall or a bulk cable plate if you just want to get the cable into the wall.

Monoprice and Parts-Express probably have the biggest selection of available structured wiring options.
