I imagine that they are "future proofing" by saying Volume 1. Theoretically, in 4-5 years there will be enough for a Volume 2.

Far from it. I believe there have been some tweaks to Ratatouille from its theatrical to video release.
Here are some Brad Bird quotes from an article in this week's Home Media Magazine:
“We added little geek stuff like the top tuft of Linguini’s hair blowing in the wind during a motorcycle ride,” Bird said. “John [Lasseter] came up with the idea of having Remy receive a little chef’s hat at the end of the movie and put it on his head in the last scene. I also slipped in extra notes for music for the home audio. If they give me the extra time for Blu-ray, I’m always trying to make the movie better.”

Just for clarification purposes, I think some of you need to watch Ron Epstein's podcast of a Bird interview that some of the HTF Administrators attended last week in LA. By the way, the writer of that article was at the same interview which is why you need to see the podcast for full disclosure instead of mine or that writer's take on what Bird was talking about. Anyhow, as I was sitting in the audience during his interview, I got the clear indication from Bird that he wants his films to be the best they can. He mentioned some of the work done on his film for the theatrical release weren't up to his expectations and that he wanted them corrected. However, due to a business decision (the corrected work wouldn't be ready for its theatrical release date), he relented, but was determined to have those film sequences corrected for the video releases since timing wouldn't be an issue in that case.
It's really a great interview that I recommend all of you watch which really gives some insight into Bird, who is always pushing to get the most out of his films. The links to the Bird interview are at the bottom of the page linked below.

To be fair to both Brad Bird and George Lucas, film makers are rarely completely happy with the released version of their films. I believe it was Lucas who said "
films are never finished, they are abandoned". But Jack Warner is quoted as saying "
I don't want it good, I want it Thursday".
The point being, Warner was right. If you give the film maker unlimited amounts of time to finish a film, you'll never get it. They will tinker with it forever. As a film maker myself I've come to realize that nothing motivates like a hard deadline. But there is always that impulse to go back and fix the little things that have bothered you, even years later. For a director the released film is almost always a huge compromise.
