Personally, I go Ken Mattingly. The guy faced adversity (the German Measles incident) but never gave up, providing valuable assistance to the Apollo 13 crew and eventually getting to the moon himself on Apollo 16.

EDIT** Plus, he got to spend a lot of time with Walter Cronkite. That's pretty cool.

Neil Armstrong, only because I was just born as he walked on the moon (and he did it first).
